Really Good Recipe for Chocolate Bread Pudding

1 cup bread cubes (about 5 slices cubed - may use whole wheat or other whole grained bread)
3 Tbsp unsweetened cocoa
2 Tbsp melted butter
1 egg slightly beaten
1/4 cup sugar or sugar substitute equivalent I used 2 Tbsp sugar and 2 packager of Stevia NOW
1/4 tsp salt
1/2 tsp vanilla or almost extract best with almond
2 cups scalded (cook until skin on top but do not boil) milk
Combine sugar, salt, cinnamon, cocoa , extract, butter and egg. Add milk slowly stirring constantly
Add bread cubes. Pour into buttered (or Pam sprayed) baking dish (casserole size)
Set this dish in a pan of warm water in an over set at 350 F.
Bake 1 hour or until a knife inserted into the center comes out clean.
Yummy hot or cold.

Can't wait to give it a try! :)It is an old family recipe (and actually the only bread pudding I enjoy) but I think it is wonderful hot or cold! Something about the chocolate with a touch of cinnamon and you can use really healthy bread - I have made it with just egg whites so it is good on a weight watching plan too. Marijo
