Easy Recipe for Baked Breakfast Egg Dish

Remake green chili strata 4 points WW for 1/8 of the pan serving OR
3 points if you leave the bread out if you leave out bread and do all egg whites it is only 2 points!
(Tossing egg yolks gives you Egg Beaters without the cost or chemicals use one whole egg for color.)
8 oz lean ham cut in pieces OR low fat cooked sausage
1 c milk (may use the Rotel juice too to equal 1 c total liquid) (may use buttermilk for nice change)
1 c 2% fat sharp cheddar divided
1 can Rotel (tomatoes + green mild chili)
5 slices Roman Meal bread
spritzer of "I can't believe its not butter"
tsp dry mustard
tsp salt
Take bread and spritz both sides with the "I can't believe it's not butter" Cut each piece of bread into 1/6. Put of bread pieces in bottom of 8 inch pan (spray with Pam first)
Then put c cheddar over bread cubes. Cut up the ham in cubes and spread over bottom layer.
Mix eggs, milk, Rotel juice, mustard and salt with egg beater. Stir in the Rotel chunks.
Place remaining bread cubes next and top with cheese (other cup) Pour the egg/Rotel mixture over top.
Cover with plastic wrap and let sit in frig several hours or overnight. Remove plastic and bake @ 350 degrees for 1 hour until golden brown on top and eggs set.
May use large green chili's split (Hatch) instead of bread for first stages of South Beach or Atkins.
