Marijo's Easy Recipe for Tuna or Salmon Patties

1-2 (7 oz) can tuna well drained and broken up

2 eggs, well beaten

Dash of pepper

 1/2 tsp poultry seasoning

2 slices of hearty bread toasted and broken into small pieces

A dash of garlic powder

1 TBSP to 1/4 c chopped onion (how crazy are you about onion?)

Mix eggs and seasonings, add onion, bread bits tuna and stir. In a large skillet heat 1 TBSP oil or spray with non-stick spray. Spoon tuna mixture into mounds (serving sized like a hamburger patty) and flatten with spoon. Cook like a hamburger patty, turning once and remove when browned.

This also works well using canned salmon (I use the whole pound can for the above). This makes a great recipe for camping or a quick and easy supper at home. Serve with fresh fruit salad and rice dish for a wonderful meal. The leftovers may be frozen and re-heated in the microwave.
