Marijo's Orange Nut Bread
2 1/4 C sifted flour
2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1 C sugar
3/4 C chopped nuts pecans, walnuts or whatever is your favorite
Combine the above in a bowl and make a well in the middle and add the following wet
ingredients:
1/4 C grated orange rind
1/2 C milk
1/2 C orange juice
2 Tbsp melted butter
Just barely mix then pour into well greased and floured loaf pan. Bake at 350 degrees for 1 hour. It is done when a knife inserted into the center of the load comes out clean. Store in the refrigerator overnight before serving.
I don't change this recipe for high altitude baking and it is a bit denser than when I make it at lower altitudes.
I have tried (instead of grating the orange rind) placing juice. Milk and the skin and rind from 3 oranges into the blender and pureeing. Sometimes this works. Sometimes the batter is then too thick and the zest bitter tasting. Not sure what makes the difference, my current altitude or the kind of oranges or ???
