Marijo's Peas and Lettuce Bowl Salad

Mix the following:

1/3 C sugar

1/4C vinegar (apple cider but you can experiment)

2 Tbsp oil

1 rsp salt

1/2tsp dry mustard

1/2tsp celery seed

Dash of pepper

Put in covered container (bottle or Cool Whip bowl) and shake.

Stir in:

2 10 oz packages of frozen peas, cooked and drained

Cover and chill

In a skillet melt 2 Tbsp of margarine or butter. Add 2 slices of bread, but into cubes and toasted until crisp turning occasionally. At serving time , divide 4 C torn lettuce between 8 bowls. Separate 2 onion slices into rings. Top lettuce with peas, then onion rings and finally bread cubes. Serves 8.

You may add cubed cooked chicken and cut up hard boiled eggs to make this a whole dinner salad. Serve with some crusty sour dough bread and fresh fruit and you have a whole meal.
