Marijo's Rice and Tuna Salad

2 C cooked rice white or brown

1-small can of tuna, drained and broken up (may use canned chicken instead)

1 C shredded carrot

1 C diced celery

2 TBSP chopped onion (or cup if you like onion)

1 C fat free sour cream

1 tsp curry powder

2 tsp lemon juice

1/4tsp salt

1/2tsp garlic powder

Combine rice, tuna, carrot, celery, onion; lightly toss and chill. Combine sour cream, curry powder, lemon juice, salt, garlic powder and mix until blended. Garnish with carrot curl and parsley. Serves 4.

OPTION: C chopped water chestnuts soaked in 2 tsp of soy sauce. 1 small can of mandarin oranges drained. Stir in gently.

This is also great with leftover cooked turkey, 1 C drained canned salmon or diced ham for a main dish meal. Serve with fresh fruit and some crusty sour dough bread for a complete taste treat.
