Marijo's Mandarin Chicken Salad

1/2 C oil
2 TBSP soy sauce
2 TBSP vinegar
1/4 tsp ginger
2- 10 ounce packaged of frozen broccoli cooked until tender
Covet the broccoli with half of the dressing (ingredients above the broccoli) and reserve the other half
of the dressing.
Refrigerate the dressing covered broccoli.
1/2C sliced water chestnuts
1/4C sliced green onion
11 ounce can mandarin oranges drained
Pour the rest of the dressing on the chicken, water chestnuts, green onions and mandarin oranges
lightly stir and refrigerate.
To serve after chilling: arrange on lettuce on individual plates, place broccoli around lettuce with the
chicken mixture in the middle. Serves 4.
This is very good with cheesy garlic bread.
Use half of a long sour dough loaf, cut in half lengthwise. Spread with your favorite butter or
margarine. Sprinkle with the bottled garlic, parsley mixture. Top with parmesan cheese and
place under broiler until lightly browned. Cut into individual sized pieces.
