Marijo's Schacht Family German Potato Salad

8 medium potatoes cooked in boiling salted water cooled, peeled and cut in to inch cubes

8 slices of bacon, fried till crisp and crumbled (reserve 3 TBSP bacon drippings)

C finely chopped onions

2 TBSP flour

C vinegar

1 tsp salt

1 C water

2 dashes pepper

4 tsp sugar

Cook onion in the 3 TBSP bacon drippings until tender 3 minutes. Stir in flour, salt, pepper and sugar

then add vinegar and water and bring to a boil. Cook 1 minute stirring. Pour over the potatoes and

bacon and mix gently. This is a sweet and sour dish served warm. This warm potato dish makes a great

addition to any meal.

This recipe has been a favorite in our family for at least 4 generations now and when we share it with others we have always gotten most favorable comments.
