Marijo's Cake That Won't Last

  3 beaten eggs

  3 C flour

  3 C sugar

  ¾ C cooking oil

  2 or more bananas cut up in small pieces (I cut in quarters lengthwise and slice)

  ½ C chopped nuts

  1 tsp soda

  1 tsp salt

  1 tsp cinnamon

  1 ½ tsp vanilla

  8 oz crushed pineapple with juice

  Don't beat the ingredients together, blend and stir just until all ingredients are moist. Bake at 350    degrees for 45 minutes. Done when toothpick inserted into center comes out clean.

 

Frosting:

1 C brown sugar, C margarine or butter, C pet milk, tsp vanilla. Stir and boil 3 minutes. Add one C chopped nuts, 1 C shredded coconut and mix in. Spread on cake when cooled.

 

Top with Cool Whip, any cream cheese frosting or German chocolate cake frosting. Very good topped with just plain vanilla or French vanilla ice cream and no frosting. May also sprinkle with powdered sugar.
