Marijo's EASY Crock Pot Chicken, Rice and Beans

3 # cut up chicken (I usually use boneless, skinless breasts may use fat trimmed pork chops also)
1 can bean with bacon soup and 3 cans of water
1 large can of diced green chilies (may add 1 can of Rotel of the heat you desire too to pick up spiciness of you don't have Rotel in your grocery the chilies and tomatoes combo is what this is) I suppose if you want it really spicy add a can of jalapenos instead. If you are from Minnesota and married to the Texan, Like I am, you could always alert the fire department to be on standby.
1 to 3 teaspoons of cumin (may omit if you don't care for it we love it and I use a Tbsp)
1 diced onion
2 cans cooked beans (great northern, black, pinto or whatever you prefer I used the great northern) DRAINED and rinsed
1 tsp garlic powder
1/2C brown rice

If you like cilantro, add a bunch of chopped cilantro to mixture.
Mix all of the above (except meat) together and pour over chicken breasts in a crock pot. Cook on high for 4-6 hours or low for 6-8. Serve with a fruit or tossed green salad and the meal is done.

I also like the fact that it is a crock pot recipe. that saves me time in the kitchen. this will be in my favorites for sure.Much blessings,Angie :-)When I worked I used to use one of those little timers (that you can turn lights off and on with when on vacation) and set it to start and then trun off the crock pot. Worked well! Will be posting more and more recipes - my hubby says he will not be surprised if my first published book is a recipe book - not exactly what I had intended but that might work too! I can't help feeling that using a tin of beans isn't the healthy optionI have made many of my recipes calling for beans with ones I have cooked from scratch and that works well too! Marijo
