Marijo's Low Sugar Chocolate Bread Pudding

1 C bread cubes (firmly packed - whole wheat or any whole grained bread - about 3-5 slices depending on the bread)
2 Tbsp melted butter or margarine
1 slightly beaten egg
2 Tbsp raw sugar
2 packets of Stevia (sold as Truvia in grocery stores like Wal-Mart)
4 Tbsp cocoa (unsweetened like Hersheys)
1/4 tsp salt
1/2 tsp vanilla
1/2 tsp cinnamon
2 cups scalded milk (can do in microwave until there is a skin on top of milk but do not boil)
Combine sugar, Stevia, salt, vanilla, melted butter, cinnamon and egg. Add milk slowly stirring constantly. Add bread cubes and mix well.
Pour into a buttered casserole dish. Set casserole dish into a pan (cake pan) of warm water. Bake @ 350 for 1 hour or until a knife inserted into the center comes out clean.
Great with a dolop of fat free/sugar free whipped topping. Serve hot or cold. You can use “no added sugar" ice cream also in any flavor that sounds good.
This is a recipe which will taste good to the whole family, not only to the one who is watching their sugar intake.

Hi would love to make this except I dont know what Stevia isIt is an herb sweetener you can get at any natural food store - not bad for you like some of the other ones are purported to be because it is from an herb. A little bit goes a very long way! Thanks for commenting! I think the new Truvia in Wal-Mart and other grocery stores would be the same thing, different brand. Marijo

I printed this out and ate the paper!Thank you again; your husband must be 600 pounds as a result of these fabulous recipes that you regularly concoct.A most scrumptious article.Actually - we really watch our weight - he is out hiking now. I'll have to give it a try. I didn't know you could buy Stevia at Walmart. Thanks for the tip. I've been paying top dollar at the health food store. Linda DOur walmart has it under the brandname Truvia and says it is stevia.... I hope so - want this recipe to turn out for you!
Great recipie. Looks simple enough to make, and as a diabetic, new low sugar recipies are always welcome.Look up my Chocolate Mousse too - you can do that no sugar if you find the right cool whip - also can make it with other flavors and it is yummy! Wwelcome to Searchwarp!!
