Marijo’s Chicken or Turkey Green Chili Chowder

The roads are icy and we are getting unexpected company. My pantry comes to the rescue again!
Begin dumping the ingredients into a large Dutch over or soup kettle
1 small onion diced and sautéed in the bottom of the Dutch oven with a little pam or 1 tbsp oil
ADD
4-5 half chicken breasts (these happened to be grilled already on a grilling machine – one of those lean, mean ones) cooked however you’d like and cut into bite sized chunks
4 cans of cream of chicken soup and 4 cans of water
1 can rotel (however hot you like it) (this is tomatoes and chilies diced)
1 can drained whole kernel corn
1 – 7 oz can diced green chilies OR a cup of frozen green chilies
1 tsp cumin (I do a lot more than this – depends on if you like cumin)
1 tsp garlic powder
½ cup parmesan cheese
May add ½ cup fat free sour cream
May add one can drained black beans or white or pinto beans
Stir it all up and heat gently. You may serve over crushed tortilla chips. I have a pot on now and need to have lunch! This much serves 6-8 adults. ENJOY!
