Marijo's Sugar Free Lemon Mousse
Posted: Monday, August 30, 2010
by Marijo Phelps
1 package fat free, sugar free lemon pudding juice of one large fresh lemon
3/4 c skim milk (I used fat free evaporated milk -chilled)
Mix above together with whisk or electric beaters till thickened
Add:
1/2 c fat free sour cream
1/2 cup fat free creamed cheese left to warm and soften at room temp (if in a hurry can use defrost setting on microwave)
Fold in one tub of Cool Whip (sugar free and fat free if you can find it, of course)
This is a decadent lemon mousse with real flavor in spite of the chemicals it might contain.
May also be used in a graham cracker pie crust (then it is no longer sugar free).
It gives you a good serving of dairy and somehow satisfies the sweet tooth in spite of being kind to your blood sugar if you are needing to watch that measurement.
It is 2-3 Weight Watcher's points depending on which Cool Whip you end up using. this recipe makes 6 servings.
